6 Ways to Eat Your Egg-Whites

Egg whites are an amazing source of protein, so don’t let yourself get bored with cooking them the same way. Here are some ideas to shake up the world of egg whites – enjoy!

  1. Frittata

    • lightly greased glass pie dish (use olive oil or low-fat cooking spray)
    • 10-12 egg whites
    • 3 sliced cooked and chopped turkey bacon/sausage/deli meat
    • 1/8 cup skim mozzarella cheese
    • Mrs Dash Tomato Basil seasoning to taste (or just use basil, parsley and pepper to taste),
    • salt to taste
    • throw in any chopped veggies you like
    • Mix it up big time!
    • Pour into lightly greased glass pie dish and bake at 350 for about 40 minutes or until center is firm and bounces back and pricking it comes out clean
  2. Crust-less Quiche bites (mini frittatas)

    • 4 egg whites
    • Chopped veggies (I like broccoli, spinach, bell peppers – 1/4-1/3 (or to taste),
    • salt and pepper to taste
    • Oregano to taste
    • Basil to taste
    • 12 count mini muffin tin sprayed lightly with spray butter or wiped with olive oil
    • Bake at 350 for 12-15 minutes or until springs back when touched
  3. Boiled, The perfect boiled egg every time!

    • Place 4-5 eggs in small pot of water
    • Put the pot on the stove and bring to a boil
    • Once boiling, set your timer for 5 minutes
    • After 5 minutes, cover and remove from heat for 5 minutes
    • then rinse under cold running water – this helps the shell separate from the egg for easier peeling
  4. Texas Scramble

    • 4-5 egg whites
    • a few slices of jalapenos, to taste
    • 1-2 TBSP salsa
    • 1/4C chopped bell peppers
    • salt and pepper to taste
    • Scramble together on medium low heat
  5. Golden French toast

    • 2 egg whites
    • 1/2 pkg of truvia
    • 1/2 tsp cinnamon or to taste
    • salt to taste (enough salt like how you scramble your eggs)
    • Beat the above ingredients in a wide mouthed bowl until well blended
    • Thoroughly coat 1 slice of Whole grain bread in egg mixture
    • Cook on medium or medium low heat in a skillet seasoned with spray butter or low-fat cooking spray
    • Will be golden brown when done
  6. Southwest Skillet / Migas

    • 1 TBSP black beans
    • 1/8 cup diced left over baked sweet potato fries
    • 1/2 slice of cooked turkey bacon chopped/torn
    • Scramble together in a skillet until eggs are cooked
    • Eat straight from the skillet or wrap it up in 2 small corn tortillas with some salsa
